Dried squid "tuyong pusit" is a dried, seasoned snack commonly found in coastal asian countries, as well as Hawaii. It is also referred to as "Shredded Squid", "Dried Seasoned Squid", "Prepared Rolled Squid" or "Sun Dried Squid". The snack was popularized, sold and consumed regularly in Hongkong during the 1970's.

This product is originally imported from china. which is then shipped directly here in Quezon province. I personnally describe the product as "delicious, not too salty, excellent when crispy, compatible with rice, best for merienda, perfect for pulutan." and believe it or not, it is my first time YESTERDAY (1/08/08) when i first tried to eat "pusit". then i discovered "napaka sarap pala" naadik ako! ubos! "parang nuts." it is then when i realized, "why not share this to others?" "ang sarap! kelangan din tong matikman ng iba." it is since then i told my missis, "ei! tawagan mo si ganyan, tatawagan ko si ganto, tas puntahan natin sa anu, daanan natin jan." then after that, i found myself here blogging about it. sarap kasi e, di matanggal sa utak ko,. *lol

anyways,

here is a quick description of how a dried pusit is made.

It is separated into different parts and skinned, cooked at 65-80C for 3-5 minutes, cooled, grated and seasoned at a temperature below 20C for more than 4 hours. Sugar, salt, sorbitol, sweetener, and organic acid is added. They are then dried at 40-45C for 12-20 hours until it reaches a moisture level of 40%. It is then aged in a cold room for 2 weeks or longer, then dried at a higher temperature of 110-120C for 3-5 minutes. It is then machine-shredded and seasoned for a second time, dried again to a reduced moisture level of 25-27%. At this phase the color will be yellow or brownish.

A SERVING SUGGESTION (my way)
cook whole (1 pack) of dried pusit on heated frying pan with enough oil and wait till it becomes Crispy golden brown,. (i personally like mine extra crispy) serve while hot, serve with COLD soft drinks or juice. serves 2-5.
